<p><strong>Ingredienser<br />
</strong>2 ss hvetemel<br />
salt<br />
pepper<br />
250 g sverdfiskfileter uten skinn og ben<br />
1 dl olivenolje<br />
2 hvitløkfedd, delt i to<br />
1 løk, hakket<br />
4 ansjosfileter, avrent og hakket<br />
4 tomater uten skinn og frø, hakket (kan erstattes med hermetiserte tomater)<br />
12 grønne oliven, steinfrie og skåret i skiver<br />
1 ss kapers, skylt<br />
friske rosmarinkvaster til pynt</p>
<p><strong>Fremgangsmåte<br />
</strong>Dryss melet utover en tallerken, og krydre det med salt og pepper. Dekk fisken med det krydrede melet, og rist av overflødig mel.</p>
<p>Varm olivenoljen i en stor stekepanne. Tilsett hvitløk, og stek den over svak varme i 2-3 minutter, til den blir så vidt gyllen. Ikke la den bli brun eller brent. Ta opp hvitløken, og kast den.</p>
<p>Legg fiskefiletene i stekepannen, og stek dem over middels varme i om lag 4 minutter på hver side, til de er gjennomstekt og gyllenbrune. Ta filetene ut av stekepannen, og sett dem til side.</p>
<p>Legg løken og ansjosene i stekepannen. Mos ansjosene med en treskje til de blir som en puré, og la løken bli gyllen. Tilsett tomatene, og stek dem over svak varme under reglemessig omrøring i omtrent 20 minutter, eller til blandingen har tyknet.</p>
<p>Rør inn olivenene og kapersene, og smak retten til med salt og pepper. Legg fiskefiletene tilbake i stekepannen, og la dem bli godt gjennomvarme. Server retten pyntet med rosmarin.</p>

<p><strong>Ingredienser<br />
</strong>40 g tørket steinsopp<br />
2 dl kokende vann<br />
800 g hermetiske hakkede tomater<br />
1 frisk rød chili uten frø, finhakket<br />
3 ss olivenolje<br />
350 g kyllingfilet uten skinn, skåret i smale strimler<br />
2 hvitløkfedd, finhakket<br />
350 g tørket pappardelle (evt. tagliatelle)<br />
salt<br />
pepper<br />
2 ss frisk bladpersille, hakket, til pynt</p>
<p><strong>Fremgangsmåte<br />
</strong>Legg den tørkede soppen i en liten bolle, hell vannet over, og la den ligge i bløt i 30 minutter. Hell i mens tomatene med saften i en gryte, og brekk dem fra hverandre med en treskje. Rør deretter inn chilien. Kok opp, demp varmen, og la den småkoke under jevnlig omrøring i 30 minutter, til væsken er blitt redusert.</p>
<p>Ta soppen opp av bløtevannet med enn hullsleiv, og ta vare på bløtevannet. Sil den gjennom et kaffefilter over tomatene, og la det hele småkoke i 15 minutter. Varm imens 2 ss av olivenoljen i en stekepanne. Tilsett kyllingstrimlene, og stek dem under jevnlig omrøring til de er gyllenbrune runde det hele og møre. Rør inn soppen og hvitløken, og stek i ytterligere 5 minutter.</p>
<p>La kyllingen steke mens du koker opp lettsaltet vann i en stor kjele. Legg i pastaen, og kok etter anvisning på pakken. La pastaen renne godt av, og legg den deretter på et forvarmet serveringsfat. Drypp pastaen med resten av olivenoljen, og bland pastaen og oljen lett. Rør kyllingblandingen inn i tomatsausen, krydre etter smak med salt og pepper, og øs kyllingsausen over pastaen. Bland ingrediensene, dryss med persille, og server retten så snart som mulig.</p>

3 egg, plomme og hvite skilt<br />
140 g sukker<br />
55 g potetmel<br />
140 g mandler, uten hinne, finhakket<br />
finrevet skall av 1 appelsin<br />
1 ½ dl appelsinsaft<br />

melis, til dryssing</p>
<p><strong>Fremgangsmåte<br />
</strong>Pensle en springform, med om lag 20 cm diameter, godt med smør. Pisk eggeplommene med sukkeret i en middels stor bolle til blandingen er blek og tykk, og det blir et tydelig spor når du løfter vispen. Rør inn potetmelet, mandlene, appelsinskallet og appelsinsaften.</p>
<p>Pisk eggehvitene med en klype salt i en annen bolle til de er stive. Vend eggehitene forsiktig inn i eggeplommeblandingen.</p>
<p>Hell blandingen i springformen, og stek kaken i en forvarmet stekeovn ved 170 °C til den er gyllen og føles fast under fingrene. Vend den ut på en rist for å la den bli avkjølt. Sikt over litt melis som dekorasjon på kaken før servering.</p>

</strong>25 g tørket steinsopp (porcini)<br />
5 dl varmt vann<br />
3 ss olivenolje<br />
3 ss smør<br />
350 g kamskjell, skåret i skiver<br />
2 hvitløkfedd, svært finhakket<br />
2 ss sitronsaft<br />
2 ½ dl kremfløte<br />
salt<br />
pepper<br />
350 g tørket fettuccine eller papperdelle (båndspagetti)<br />
2 ss bladpersille, hakket, til pynt</p>
<p><strong>Slik gjør du:<br />
</strong>Legg soppen i en bolle med det varme vannet. La den ligge i bløt i 20 minutter. Sil av vannet, og ta vare på den. La steinsoppen renne av, og hakk den grovt. Kle en sil med kjøkkenpapir, og sil bløtevesken over i en bolle.</p>
<p>Varm oljen og smøret i en stor stekepanne over middels varme. Tilsett kamskjellene, og stek dem i 2 minutter, eller til de er så vidt gylne. Tilsett hvitløken og steinsoppen, og rørestek deretter det hele i 1 minutt.</p>
<p>Rør inn sitronsaften, fløten og 1 ½ dl av bløtevannet fra soppen. Kok opp, og la det småkoke over middels varme i 2-3 minutter under konstant omrøring til væskemengden er redusert til halvparten. Krydre etter smak med salt og pepper. Ta kokekaret av varmen.</p>
<p>Kok pastaen som angitt på pakken, til den er myk, men fremdeles gir en viss tyggemotstand. La den renne sv, og legg den over på et forvarmet serveringsfat. Varm sausen raskt på ny, og hell den over pastaen. Dryss over persillen, og bland deretter retten godt. Server med det samme.</p>

<p><em>NB! Jeg erfarte at deigen ble for flytende, så spe på med mer mel. Elt i mixer i ca 10 min. til den slipper bollen.</em></p>
<p><strong>Slik gjør du:</strong></p>
<p>Finhakk hvitløk, rødløk, oliven, soltørkede tomater og krydderurter. Bland det tørre sammen i en bolle. Tilsett hvitløk, rødløk, oliven, soltørkede tomater og krydderurter.</p>
<p>Bland inn gjæren som er oppløst i vannet sammen med olivenolje og elt deigen godt, gjerne i en kjøkken-maskin.</p>
<p>La deigen heve til dobbel størrelse. Bak ut tre runde brød og la de etterheve i ca. 40 minutter.</p>
<p>Lag noen snitt, og stek brødene på 210 °C ca. 30 minutter.</p>
<p>Avkjøl på rist.</p>

<p>Til 4 personer</p>
<p>2 ss olivenolje<br />
2 rødløk, hakket<br />
1 fedd hvitløk, finhakket<br />
5 squash, små, skåret i 1 cm. tykke skiver<br />
1 ½ dl grønnsaksbuljong<br />
1 ts hakket frisk oregano<br />
Salt<br />

<p>1<br />
Varm olivenoljen i en stor, tykkbunnet stekepanne. Tilsett løk og hvitløk, g stek over middels varme i 5 minutter til det er mykt og begynner å ta farge. Rør av og til.</p>
<p>2<br />
Tilsett squash, og stek under hyppig omrøring i 4-5 minutter til det begynner å ta farge.</p>
<p>3<br />
Tilsett buljong. Rør inn oregano, og smak til med salt og pepper. Skru ned varmen, og la det surre over svak varme i om lag 10 minutter til all væsken er absorbert. Server straks.</p>
<p>Variasjon<br />
Tilsett 200 g pancetta (bacon) i terninger sammen med løken under trinn 1.</p>
